Schnitzel Cheese and Chutney
100gm sliced cheese. . 4 beef schnitzels. . 2 tbsp chutney. . 1/2 cup flour. . 1 cup milk with little salt and pepper. . 1 cup breadcrumbs
Lay schnitzels on cutting board and lay cheese slices on one half of each. Spread the cheese with the chutney and fold over.
Dust the parcels in the flour, dip in the seasoned milk and then into the breadcrumbs. Redip in milk and then breadcrumbs. Refrigerate 15 mins. . Oil in frypan and cook turning as required

Schnitzel Cordon BleuFlour, Egg and Crumb
Lay schnitzel out flat and pound until even... Top with 1 - 2 tbsp tomato relish and some grated cheese ... ( Mozzarella / Edam / Tasty / Blue Vein )...
Fold in half and pin with wet toothpicks. . Crumb and cook each side until golden and crisp turning as needed. Remove toothpicks and serve.

Gourmet SchnitzelPreheat oven to 180 c
"Lightly" fry schnitzel pieces on one side and line the bottom of a roasting dish, raw side up. . Sprinkle over grated cheese, chopped red / green capsicum and sliced mushrooms. . Place a layer of sliced ham over the top, then cover with grated cheese, capsicum etc again. .
Sprinkle with little still white wine if you want...
Bake for 30 mins... until cheese is all melted. .

Roll Ups. .
Ingredients:
1 cup chopped uncooked spinach. . 6-8 sundried tomatoes. . 1 red onion finely chopped. . 1 egg. . 200g feta cheese roughly chopped or cream cheese if preferred. .
Method: Beat the egg and add all other ingredients and mix well.
Add mixture to flattened schnitzel and roll up turning in edges and securing with wet toothpicks. . Cook in moderate oven in roasting dish ( about 160c ) for 30 odd mins...

I saute mushrooms and onion, place in schnitzels, roll up and bake with a homemade tomato sauce and herbs.

make a stuffing of bread, finely chopped gherkin, finely chopped onion, salt and pepper, minced garlic, some tomato relish and an egg to bind, squish it all together, lay out peice of schnitzel and put a slice of bacon on it then in the middle a dollop of the stuffing, fold sides up and then make a parcel, secure with toothpicks or string, brown, then add water, worcester sauce, anything you think would be tasty and bake in the oven like a casserole, thicken sauce with some flour and water or cornflour.

simple receipe which always goes down well. Very rich so 1 or 2 is enoughfor most people- slice of cheese approx 1cm thick wrap snitzel around then wrap bacon around that, secure with toothpick and place in crockpot for 5 hrs on low. Wow melt in your mouth!

don't try the schnitzel in the crock pot recipe over in parenting. We tried it and don't like it.

LOL - we had it and enjoyed it. Each to their own. Makes me smile when people say things like "don't try... . . " cos just because you don't like it, doesn't mean others won't. If you read the threads about it, there's certainly plenty of people who have enjoyed it!
