DANISH APPLE MUFFINS
2 apples (Granny Smith or Braeburn are good)
2/3 cup sugar
1 & 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp mixed spice
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup sultanas
60 gms butter, melted
1/2 cup milk
1 egg
icing sugar for dusting

+ Peel & slice apples, place in bowl and cover with sugar.
+ Sift together flour, baking powder, baking soda, mixed spice, nutmeg & cinnamon into a bowl, add sultanas & make a well in the centre.
+ In another bowl lightly whisk together melted butter, milk and egg.
+ Stir the apple & sugar mixture into this.
+ Fold apple/egg etc mixture into dry ingredients and stir quickly to combine.
+ Spoon mixture into prepared muffin tins and bake 12-15 mins or until muffins spring back when lightly pressed.
Serve dusted with icing sugar.

These are good to eat the day after too, if they don't disappear the day they're baked! I plump the sultanas by filling up the half cup with cold water and letting them sit, then drain and dry, and add with the apple/egg mix rather than with the flour.
