For muffins made with layers of apple made in texas muffin tins(had them in a cafe)but they wont give the recipe out:

just use a normal muffin mix, put bit of mix in muffin tin, then a dollop of stewed apple. then more mix overtop. i make a cake similar to muffins and thats all i do.

Yep thats exactly what I do as well but never realized that they had them in cafes. Thought I made it up myself. LOL Must be a common thing to do.

and if you want to make them extra fancy, put a skinny slice of appleon the top, and then carefully sprinkle with cinnamon sugar before cooking, don't sprinkle to thickly tho, or when it melts it runs down the sides of the muffins and they are shocking to get out of the tins.
