Alison and Simon Holsts Wild duck withpork sausage stuffing and gravy, from slow cooker book on the menu in my house tonight... Coat cooker bowl with non stick spray, Sprinkle duck with seasoned flour pat in well brown duck all sides in hot pan with little oil. Put a few sprigs thyme in cavity put bird on its back in cooker. Add 1/2 cup each of good red wine, orange juice, OR apple juice, and water turn cooker to high and cover. While duck starts cooking make a roll of stuffing to cook beside it. Cut into 5mm cubes onion, stalk celery, 1 unskined eating apple, put in saucepan with 1 tablespoon butter and brown lightly for about 5 mins. Skin 4-6 pork sausages put the sausage meat with 1/2 cup breadcrumbs OR fine rolled oats into bowl add the onion mixture and combine all together mix well. With wet hands form into a log about 20cm and coat with more breadcrumbs. Place in cooker carefully beside duck cook 4-5 hours turning once or twice till tender. Turn off cooker lift out duck cool, till you can handle it take all the meat off it place it back in the cooker. One hour before serving turn cooker on to low. To serve slice the sausage roll crosswise lift out duck meat slice, arrange on plate with colourfull vegs and a spoon of the slightly thickened sauce over the meat.
