I once came across a recipe that used rice bubbles (i think! ) and whatever else as a crunchy coating for chicken tenders/nuggets, does anyone know what i am on about or have a similar recipe they could share? Please and Thankyou!

There is a recipe in the edmonds book which I think is called Crunchy Coated Chicken. it uses crushed cornflakes, a little flour, some coconut, chicken stock and a teaspoon of orange drink powder eg refresh. I prefer to use grated rind of a real orange to flavour it. it is delicious -a great favourite with my family. I don't fry it, I bake in the oven.
