How about having a thread that incorporates finger foods, nibbles, platters, drinks/-
cocktails and any other food/drink suitable for a gathering -whether it be a wedding, 21st, housewarming, fami-
ly gathering etc. I shall start off with something to serve with fresh seafood or vegetables - a curry dip.

Curry Dip 350g jar thick mayonnaise;3 tsp curry powder;2 tsp chilli sauce;2 tsp lemon juice;1/3 cup sour cream;1/2 tsp Worcestershire sauce;3 green spring onions, finely chopped. Combine all ingredients in a bowl, mix well. Serve as a dip with fresh seafood and vegetables. Try prawns, blanched beans, broccoli, snow peas, carrots, yellow beans.

Pineapple and Vermouth Punch 3 cups canned sweetened pineapple juice;2 tbsp creme de menth;1/3 cup dry vermouth;2 tbsp icing sugar;2 cups lemonade. Combine pineapple juice, liqueur, vermouth and sifted icing sugar in serving bowl. Add lemonade just before serving. Makes about 1. 5 litres.

Smoky Cheese & Pumpkin Mini Quiches Cook quiches the morning of the party and reheat just before serving. 3 sheets of ready rolled puff pastry;2 bacon rashers, finely chopped;1 onion, finely chopped;2/3 cup mashed pumpkin;1 cup grated smoked cheese;1 egg, lightly beaten;1/4 cup milk;pinch nutmeg;1 bacon rasher extra. Cut pastry into 7cm circles with a fluted cutter, press into shallow patty pans. Fry bacon and onion until bacon is crisp, drain. Stir bacon mix into combined pumpkin, cheese, egg, milk and nutmeg. cont... . .

Deep Fried Mozzarella Sticks 150g plain flour;150g cornflour;2 eggs, beaten lightly;375 ml water;100g packaged breadcrumbs;500g mozzarella;vegetable oil for deep frying. CHILLI PESTO DIPPING SAUCE:90g sundried tomato pesto;160ml sweet chilli sauce. Whisk flour, cornflour, egg and water in a med bowl until smooth. Cut cheese into 1cm wide fingers. Heat oil in large saucepan or use a deep fryer. Deep fry cheese sticks in batches, until golden, drain on absorbent paper. Serve hot with chilli pesto dipping sauce. Makes 32. For chilli pesto sauce, combine the pesto and chilli sauce in a small bowl. The mozzarella can be cut into sticks and sauce made the day before. Cover separately and refrigerate till required.

Tarragon & Lime Scallops Uncooked scallops and lime wedges can be skewered up to 4 hours ahead. Cover, refrigerate till required. You will need 24 bamboo skewers for this recipe-soak them overnight in water to prevent them burning. 24 scallops, roe removed;2 tbsp coarsely chopped fresh tarragon;1 tbsp lime juice;1 tbsp olive oil;3 limes. Rinse scallops under cold water;dry with absorbent paper. Combine scallops in med bowl with tarragon, juice & oil;toss and coat scallops all over. Cut each lime into eight wedges, thread one scallop and one lime wedge onto each skewer. Cook, in batches on heated oiled grill plate or bbg until scallops are cooked through.

Smoked Roe Pate' 250g smoked roe;250g cream cheese;300ml sour cream;1 tbsp lemon juice;2 tbsp chopped parsley;2 gherkins;salt & pepper;1 tsp French mustard. Remove skin from roe, put cream cheese into bowl and beat till creamy;add roughly chopped roe;beat until well combined, add sour cream, parsley, finely chopped gherkin, salt, pepper & lemon juice and mustard. Mix well. Place in dish, cover and refrigerate overnight.

Turkey, Brie & Cranberry on Pumpernickel rounds 300g brie;120g thinly sliced smoked turkey bread;24 packaged cocktail pumpernickel rounds;1/4 cup whole berry cranberry sauce;1 tbsp chopped fresh chives. Cut cheese into small thin slices. Divide cheese and turkey equally among rounds. Top each one with a small dollop of cranberry sauce and a piece of snipped chive. Serve at room temp.

Cucumber Croutes Process 250g cream cheese with one lge avacado;add lemon juice and sambal oelek to taste. Pipe or spoon onto slices of telegraph cucumber;top each with canned, flaked RED salmon and thinly sliced spring onion.

Prawn Toasts With Dill Butter 5 slices white bread;125g butter;1 tsp lemon juice;1/2 tsp dried basil leaves;1 tbsp chopped parsley;1 tbsp chopped fresh dill;500g small cooked prawns, shelled. Toast bread, remove crusts, spread toast generously with combined butter, lemon juice, basil, parsley & dill. Cut each piece of toast into 4 squares. Top with halved prawns. Garnish with tiny lemon or lime slices, caviar and dill. Makes 20.

Tomato Lamb Curry For A Crowd Can be prepared up to two days before serving or it can be frozen. 3 boned-out legs of lamb (about 2kg each) 2 tbsp oil;4 cloves garlic, crushed;10 med onions, quartered;1 tbsp curry powder;3x400g cans tomatoes;3 tsp cornflour;2 tbsp water;90g blanched almonds;30g butter;3 tbsp chopped parsley. Trim away excess fat from lamb, cut into 2. 5cm cubes. Heat oil in a large pan, gradually add enough lamb to cover the base of the pan in a single layer, cook over high heat stirring till goldenbrown all over, remove from pan, repeat with remaining lamb until all is well browned cont... .

Itis important to fry the meat well. Add garlic, onions and curry powder to pan, stir constantly until onion is lightly browned. Add undrained crushed tomatoes. Stir until mixture boils. Smoked Salmon Scramble for 10. Great for a family brunch-cook as close to serving time as possible. 125g packet xream cheese;60g butter;1/2 cup cream;10 eggs;5 slices smoked salmon, chopped;1 tbsp chopped capers;2 tbsp chopped fresh dill. Cream cheese and butter and cream, place in pan over low heat. Break eggs into pan, stir constantly with wooden spoon until mixture is smooth. Add smoked salmon, capers and dill. Stir until eggs are just cooked and creamy. Serves 10.

Pasta Salad just increase the amounts of ingredients you need to make a larger salad.
Fry two large chopped onions in a little olive oil, add about 1 cup red pepper from a jar, 1 cup sliced button mushrooms -add some of the liquid from the jar of peppers to keep moist. In a lge pan of salted water, add two packets of spiral tri-colour pasta and cook till al dente'-drain in colander and rinse well. When drained, place in lge bowl. cont... . .

Pour hot onion mixture into pasta and slice in half about half a cup of stuffed green olives and the same of black pitted olives. Make a dressing with plum sauce (delmaine is best), red wine or balsamic vinegar and caster sugar to taste. Stir well and pour over sald. Mix through thoroughly. In a non stick pan-add about 1/2 cup pine nuts and gently toast till golden. Pour over sald and mix through. Just add more of the above ingredients to your own taste if required.

500g thick NY cut rump steak. Mix 1 tbsp horse radish cream and wholeseed mustard together. Coat steak and let sit for atleast 15 minutes. Then cook to your liking. Then slice thinly. Serve on top of crosstini and a leaf of spinach. Top with a tsp of a mix of 1Tbsp horseradish cream, 1Tbslp wholeseed mustard and 1/2 cup sour cream. Very very yummy.

What a great idea Brianmac getting all the recipes for occasions consolidated in one thread. I have my son's 21st birthday to prepare for at the end of June and can use some of your ideas. I look forward to many more. Thanks :)

Thanks, it saves alot of time for people needing this type of food. Post #10 should read turkey breast -not turkey bread! ! -you COULD use smoked chicken too.
