can these be made from frozen berries and then once the muffins made re frozen. thanks

Yes, I do this all the time. You ARE cooking the berries so it's OK.

My recipe is 2 c flour 2tsp baking powder 3/4 c sugar 1 egg 1/3 oil 1/3 cup milk Mix as less as possible then at the end put 1 c raspberries and 1/2 c white chocolate. Makes 12 large cook 180o 15 mins

kiwiscrapper1, I have successfully used the following recipe which is from the Chelsea Sugar website.
RASPBERRY AND WHITE CHOCOLATE MUFFINS 2½ cups self-raising flour 100g butter, chopped 1 cup each of caster sugar, milk and fresh or frozen raspberries 1 egg, lightly beaten ½ cup white chocolate bits
Place the flour in a large bowl. Use fingertips to rub the butter into the flour, until well combined. Add the sugar, milk, egg, raspberries and white chocolate. Mix until just moistened. Spoon into a lightly greased or oil-sprayed 12 cup muffin tray. Bake at 190ºC for 20 minutes. Stand for 5 minutes before turning on to a wire rack to cool. Dust with icing sugar before serving. Makes 12 muffins. :-))
These are nice. My mum makes this recipe and they are so good
