Chicken in Tarragon and Cream Sauce
This is just stunning, have made it again and again!
Ingredients
15 g butter 15 ml olive oil 4 skinless, boneless chicken breast halves (or 4 chicken pieces) Salt and pepper to taste 120 ml cream 15 ml Dijon mustard 4 g (a good handful) chopped fresh tarragon.
Method
Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper, and place in the skillet. Brown on both sides. Reduce heat to medium, cover, and continue cooking 15 minutes, or until chicken juices run clear. Set aside and keep warm. Stir cream into the pan, scraping up brown bits. Mix in mustard and tarragon. Cook and stir 5 minutes, or until thickened. Return chicken to skillet to coat with sauce. Drizzle chicken with remaining sauce to serve

Moorish Chicken in Almond Sauce
I adapted this from a Spanish cookery book and love it! You could also use the crockpot rather than the oven for the baking part. Serves 4.
Ingredients
4 chicken legs or pieces Sea salt & freshly ground black pepper 4 small red onions (peeled) 1 red pepper (deseeded) 3T olive oil 1/2 cup dry white wine 1/4t saffron threads infused in 1/4 cup boiling water 400g can chopped tomatoes 1T fresh thyme leaves 1 cup blanched almonds (lightly toasted & roughly ground)
Method
Preheat oven to 180C. Season chicken pieces with salt & pepper, place in an oven pan. Cut onions into wedges, slice pepper in thin strips. Heat a large frying pan, add oil, onions & pepper strips. Cook for 5 mins, tossing frequently over medium heat. Add wine & simmer to reduce by half. Add saffron & liquid & tomatoes. Stir in almonds to thicken sauce, bring to boil. Pour sauce over chicken, bake 1 hour, or until chicken tests cooked. Adjust seasoning with salt & pepper before serving scattered with fresh thyme.

Chicken Kashmir (Indian)
My husband has made this for me several times and it's wonderful! The cinnamon adds this lovely aromatic warmth, making this my new favourite Indian recipe! This should serve 4-6.
Melt the butter in a deep lidded frying pan (we used a lidded wok) Add the onions, peppercorns, cardamon and cinnamon and fry until the onions go golden Add the ginger, garlic, chilli powder, paprika, salt to your own taste and fry for 2 minutes, stirring Add the chicken and fry until browned Gradually add the yoghurt, stirring constantly Cover and cook on a low heat for 30 minutes

Here's my one its called a Chicken & Potato Pie (soooooo good)
3 Cups diced Vegetables 400g Lean Cjicken Mince (i cut up chicken into small pieces) 1/4 cup of flour 1 1/2 cups prepared chicken stock 1. 2kg potatoes, peeled cooked & mashes 1/4 cup fresh white bread crumbs
Preheat oven to moderate 180degC. Lightly grease four 1-2 cup individual pie dishes (or a caserole dish) Heat a large panand spray with olive oil. Add the vegetables and cook for 2-3mins. Then add the mince (or chicken chopped up) and cook for a further 3mins add a little water if needed to prevent sticking.
Sprinkle the flour over the surface and gradually add the stock and mix until well combined. Simmer for 5mins stirring occassionally. Season to taste with pepper.
Spoon into dishes and top with potato, sprinkle with breadcrumbs. Bake for 15-20mins

Chicken & Brocolli surprise! !
Brown chicken and put in overproof casserole dish. top with chopped raw brocolli florets. Mix 1 can Cream of Chicken soup with 1/3 can Evapourated Milk and 1 cup water and 1 chicken stock cube. 1 T curry powder and equiv. to 1/3 can of mayonaise. Pour over chicken and brocolli and top with breadcrumbs and cheese. Delish and easy and great with roast potatoes.

Too late for tonight but this is so delish and very gourmet and sooo easy. Make pockets in top of chicken breasts, stuff with pesto, creamed cheese and bing cherries (or anything your heart desires sundried tomatoes, garlic butter, apricots, feta... limited only by your imagination) wrap in bacon and bake for 45 minutes. Yummmmy.
