Not at the mo but I do know when you cook the rice to cook it in chicken stock rather than plain water.....adds lots of flavor

I got this from New Zealand woman's weekly..

3 eggs
1 onion
2 tablespoons butter
300g smoked chicken breast or 1 cooked chicken breast
¼ cup oil 3 cups cold, cooked rice
1 teaspoon crushed prepared chilli
1 tablespoon prepared ginger
3 cups stir-fried vegetables
2 spring onions
Soy sauce, to serve
Sweet chilli sauce, to serve

Lightly beat eggs together. Peel onion and chop finely. Heat butter in a large frying pan or wok. Cook onion, stirring often, until soft. Pour in eggs and cook for two to three minutes. Turn omelette out on to a board and chop roughly. Remove skin from smoked chicken and slice chicken finely. Heat oil in a wok for frying pan. Toss rice in oil with chilli and ginger. Add stir fried vegetables and toss until vegetables are hot. Stir through chicken until hot. Fold in omelette pieces. Place fried rice in four serving bowls. Wash spring onions and chop finely. Sprinkle over fried rice and serve with soy sauce and sweet chilli sauce.

Serves 4
