This is a recipe I use : Passionfruit, Coconut, Lime and Banana Cake 175g butter 215g caster sugar 3 eggs, lightly whisked 200g self-raising flour, sifted 50g shredded coconut 2 mashed bananas rind & juice 1 lime 1/2 t BP 200g sour cream Shredded coconut, toasted, extra, to decorate Passionfruit icing 3 large passionfruit, halved (1 cup) icing sugar mixture, sifted 125g butter Preheat oven to 170°C. grease & line base and sides of 23 cm tin. Cream butter, sugar, egg mix in banana, lime juice, rind and coconut. Sift in flour, baking powder and sour cream. Spoon mixture into the pan and smooth surface. Bake for 45-50 minutes or until golden and a skewer inserted into the centre comes out clean. Set aside in the pan for 5 minutes to cool before turning onto a wire rack to cool completely.
Make passionfruit icing, beat until smooth and creamy. Gradually beat in the passionfruit juice. Sprinkle the toasted coconut over.
