I have been asked to make a birthday cake for a young lady who is Vegan.
Has anyone got any suggestions for which I would be extremely grateful.

This is choc cake that's great. You cake double /triple recipe to make as big as you like
1 cup sugar, 1 1/2 cup flour, 1 teaspoon baking soda, 1/4 cup cocoa powder, 1 cup water, 1/2 cup oil, 1 teaspoon vanilla extract, 2 tablespoon vinegar. Sift all dry stuff together. Mix the water, oil and vanilla. Stir wet into dry really well. Lastly stir in the vinegar. Bake at 180 for aprox 30 min. Makes a lovely moist cake

Microwave Vegan Chocolate Cake
1.5 cups flour 1 cup sugar 1 tspn salt 1 tspn baking soda 3 tbspn cocoa 5 tbspn canola oil 1 tbsp white wine vinegar 1 tspn vanilla essence 1 cup cold water
1. Mix dry ingredients. 2. Make 3 indentations and put the oil, vinegar and vanilla essence in each. 3. Pour the cup over water over the whole lots and stir until smooth 4. Pour into a plastic microwave cake ring mould and cook in the microwave. I have an 850W microwave and I cook the cake for about 7 or 8 mins. Test with a knife. Leave for at least 5 mins (I can never wait any longer. ) and turn it out.
I don't bother with icing. It is really good with tinned boysenberries and their syrup whilst warm.
