Hi guys I have too much fresh cream so thought I might just try to make some icecream . just vanilla would be fine as don't want to waste the cream but don't have an icecream maker . did a search but no recipes surfaced. Anybody have an easy recipe that I could give a go.? Thanks.

Try a Semifeddo
Mixed Berry Semifreddo
This recipe looks impressive but is remarkably easy to make. Serve topped with extra berries and dust with icing sugar.
Ingredients 3 eggs 2 egg yolks, extra 1/2 tsp vanilla extract 1 cup Caster Sugar 500g frozen mixed berries 2 cups cream Raspberries and blueberries, for garnish Method Combine eggs, extra yolks, vanilla extract and Caster sugar in a heatproof bowl and place over a saucepan of simmering water and whisk for 5 minutes or until frothy. The heat helps to increase the volume of the whipped mixture. Remove from heat and beat with an electric mixer until thick and pale. Lightly crush 300g of mixed berries and fold through egg mixture. Beat cream with an electric mixer until soft peaks form. Gently fold through egg mixture. Line a 26cm x 10cm loaf pan with plastic wrap. Lay remaining berries at base of pan. Pour over Semifreddo. Cover with foil and freeze overnight. Remove from pan and decorate with berries. Enjoy cut into thick slices.

Passionfruit semifreddo
1 egg 2 egg yolks 1/2 cup (100g) caster sugar 300ml thickened cream 1/3 cup (80ml) passionfruit pulp 2 tablespoons lemon juice 125g strawberries, hulled, thinly sliced 1/4 cup mint leaves 2 passionfruit, extra Line the base and sides of an 8 x 25cm bar pan with plastic wrap, allowing the sides to overhang. Use an electric mixer to whisk the egg, egg yolks and sugar in a medium heatproof bowl until thick and creamy. While continually whisking, place the bowl over a saucepan of simmering water and whisk for 5 minutes or until mixture doubles in size. Remove from heat and set aside. Use an electric mixer to whisk the cream in a bowl until soft peaks form. Add half the cream to the egg mixture and gently fold until just combined. Add the remaining cream, passionfruit pulp and lemon juice and fold until just combined. Pour into the prepared pan and place in the freezer for 6 hours or overnight until firm. Turn the semifreddo out onto a serving platter. Top with the strawberry slices and scatter with mint leaves. Drizzle with the fresh passionfruit pulp and serve immediately.

Real Vanilla Ice cream
Ingredients • 6 egg yolks • ¾ cup caster sugar • 3 cups cream • 1 vanilla pod, split Home-made vanilla icecream should be lemon in colour from the egg yolks, smooth from the cream used to make it and speckled with tiny black seeds throughout from the fragrant vanilla pods. Its rich texture should just melt in your mouth. Method 1. In a bowl blend the egg yolks with half the sugar, then whisk until very light and thick. Lift the whisk from the bowl and with the trail of mix falling from the whisk make the figure 8 into the mixture below. If the figure 8 can still be seen by the time you have finished making it, then you have whisked the egg yolks enough. If not, continue until you can. 2. Stir the remaining sugar into the cream. Scoop in the seed from the vanilla pod and then heat the cream, either in a saucepan or in the microwave until hot. 3. Slowly stir the hot cream into the egg yolks, being careful not too go too fast or you will scramble the eggs. 4. Place the mixture into the top of a double saucepan or a large heat-proof bowl and stir with a wooden spoon over a saucepan of simmering water until the mixture thickens and coats the back of the spoon. 5. Remove from the heat. Pour into a cool, clean bowl to arrest the cooking. Cool, then refrigerate until cold. 6. To Freeze 7. Freeze in an icecream machine, following the manufacturer's instructions, or 8. Pour into a large, lidded freezer-proof container and freeze for 4 hours. Beat the mixture with a whisk or electric beater and return to the freezer. Repeat once more before final freezing.

Here is a very easy icecream which does not need to be churned
Parfait Ice Cream
Serves 12
8 egg yolks 1c sugar 1/2c water 3/8c cognac, eau de vie or 3 tsp vanilla paste 600ml cream
Beat yolks until thick. Make syrup with sugar and water and cook to 105 degrees C. Slowly pour hot syrup into yolks while whisking and beat until cold and it falls in ribbons.
Whip cream to a soft peak and add liqueur or vanilla paste. Fold into eggs, freeze without stirring.
Instead of syrup, use maple syrup and rum.

Beat together 600 mls cream and a can of condensed milk. Add any flavouring you like, e.g. mashed fruit, maple syrup, vanilla bean paste, chocolate chips, nuts etc. Freeze till set.

Yep I do 500ml cream to one can condensed milk, simplest ice cream recipe ever, Oreos work great, hokey pokey etc.

Try using a tin of Caramel instead of condensed milk, it is really nice too.

You make it the same way but put it in a dish in the freezer and stir it every now and then - like you'd do with a sorbet. But the ingredients are the same.

Yep whip the cream or cream and vanilla essence, mix in the Sweetened condensed milk well then pour into a bowl to freeze. Just add whatever you feel like, chopped chocolate, biscuits, smashed crunchie bar.
