Annabel Langbein’s PUMPKIN, DATE AND ORANGE SCONES Makes 12 large scones.
3 cups self-raising flour 2 cups pitted dates, chopped ¼ cup sugar 4 tsp baking powder finely grated zest of 1 orange ¼ tsp salt 1½ cups cream 1 cup mashed cooked pumpkin ¼ cup fresh orange juice a little milk, for brushing
Preheat oven to 200°C fanbake. Line an oven tray with baking paper and lightly dust with flour. Combine flour, dates, sugar, baking powder, zest and salt in a bowl. Combine cream, pumpkin arid juice and mix into the dry ingredients with a knife until the mixture just comes together into a soft, wettish dough. Do not over-mix. Turn out onto prepared tray and flatten into a circle about 3cm thick. Cut into 12 wedges. Brush tops with a little milk. Bake until risen, fully set in the centre and lightly golden (about 20 minutes).
