Amazing Quick mix Slices

White Xmass

melt 250 grams of kremelta,
pinch of salt.
mix
1 cup each of,
coconut,
skim milk powder,
dried fruit,
rice bubbles.
add
1/4 cup of chopped walnuts.
Mix the kremelta in with
1 teaspoon of vanilla.
Set in your fridge.
Enough for a swiss roll tin. enjoy

Sultana & Coconut Slice
Preheat oven to 180C

sift into a bowl
150g self-raising flour
pinch salt
add
110g caster sugar
90g desiccated coconut
150g sultanas

Melt
90g butter
1 tbsp golden syrup
add
1 tsp vanilla extract
mix wet into dry
60ml lemon juice
35g icing sugar

press into a prepared swiss roll tin.
Bake 15 to 20 minutes

Chocolate Caramel slice

Preheat oven to 160%C

Sift into a bowl
1 heaped cup of plain flour
1 teaspoon of baking powder
1 Tablspoon of cocoa powder
Add 1 cup of sugar
Melt 50 grams of butter and mix into the dry ingredients
Press out into a prepared Swiss roll tin

Melt and spread over the chcolate base
25 grams of butter
1/2 a tin of sweetened condenced milk
1 Tablespoon of golden syrup

Bake 30 minutes
Ice when cold with chocolate icing

10 Minute Chocolate Slice

Melt 150g butter, 2 tbsp cocoa, 3/4 cup sugar, 1 large tbsp golden syrup in microwave. Stir in 11/2 cups flour, 3/4 cup coconut, 11/2 tsp baking powder, nuts/fruit (optional). Bake in slice tin 190C for 10 mins. Cool, ice.

Sultana chew bars

Preheat oven to 160%C
Prepare swiss roll pan

Melt in a pot
185 grams of butter
125 grams of brown sugar
2 dessert spoons of golden syrup
Add sifted
2 cups of flour
2 teaspoons of baking powder
1 & 1/2 cups of sultanas

Bake 20 minutes
Ice when cold with a lemon icing.

Hi just to make sure in the sultana and coconut slice- the last 2 items- the lemon juice and the icing are for the top after cooking?

You could put Orange icing on this too, if you would rather. I always mix my icings with milk, I don't always put that on my recipes, I take it for granted most cooks know what they are doing. Most all of my recipes have ingredients only, no methods. It is that simple.

Mamas Famous Coconut slice . Papa liked a bit too

Preheat oven to 180deg C.
Grease an 18cm x 28cm tin.

Combine
1 ½ cups plain sweet biscuits crushed.
75g butter melted

Press mixture into tin.

Sprinkle over crumb base,
Separately
1 cup milk chocolate bits
1 cup dessicated coconut
1 cup raisins
1 cup flaked almonds

Pour over the top
1 x 395g can sweetened condensed milk

Bake for 25-30 minutes until top is golden brown and the centre is firm.
Allow to cool in tin.

Muesli bars

We made these before you could even buy muesli bars, sold like hot cakes.
Lightly toast
1 cup each of;
sesame seeds
sunflower seeds
coconut
cashew nuts
add;
1 cup of brown sugar
1 cup of sultanas
Heat to a soft ball stage 116 deg c 240 deg f
100 grams of butter
11/4 cup of honey
1/2 cup of brown sugar
mix with the dry ingredients and press into a swiss roll tin to set. cut into 20 bars.
We would change the sultanas to make them different.
ch dry pineapple. ch apricots. ch apricots and slivered almonds[replaced the cashews] dried bananas [popular], these days there are even more options. dried blueberries, cranberries,lots of things we couldn't get back then.

Carrot and Zucchini Bars. with Lemon Cream Cheese Frosting
I will try this when Zucchini are in season.
Ingredients:

2 eggs, slightly beaten
3/4 cup packed brown sugar
1/2 cup canola oil
1/4 cup honey
1 tsp vanilla
1 1/2 cups shredded carrot
1 cup shredded zucchini
1/2 cup chopped walnuts
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp ground ginger
1/4 tsp baking soda

Lemon Cream Cheese Frosting:

1 (8 oz) pkg reduced fat cream cheese
1 cup powdered sugar
1 1/2 tsp lemon zest

Directions:

Preheat oven to 175 degrees C. In a large bowl, whisk together the eggs, brown sugar, oil, honey, and vanilla. Don’t worry about clumps of the brown sugar, those will dissolve as it sits while you prepare the remaining ingredients. Then fold in the carrot, zucchini, and walnuts
In another bowl combine add the flour, baking powder, ginger, and baking soda. Whisk to blend together.
Add to flour mixture to the wet mixture. Stir just until combined. Spread batter into an ungreased 13x9x2-inch baking pan.
Bake about 25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.
Once the cake is cooled prepare the frosting. In a medium mixing bowl, beat the frosting ingredients with an electric mixer on medium speed until fluffy. Spread or pipe the frosting over the cooled bars.

Lemon slice
Prepare swiss roll pan

Melt
225 grams of butter
1 tin sweetened condensed milk
Add grated zest of
2 lemons

break and crush
2 pkts wine biscuits
Add
1 & 1/2 cups of coconut

Combine the wet into the dry
Press into tin. Chill.

Lemon icing

25g butter, softened
2 cups icing sugar
1 Tbs lemon juice
1 tsp finely grated lemon zest

Mix together and beat adding enough hot milk to make a smooth icing.

quick choc slice - 1 homebrand choc cake mix ($2 ) add 3/4 cup coconut 125grm melted butter mix cook 22 mins and then ice - you can also use same recipe with the plain cake mix then ice with any flavour u want - also put plain mix in slice tray top with rasp jam then mix tog 1 egg 1 cup coconut and 3/4 cup sugar cook 25 mins or until brown

yes all the time I once had a shop and used these bases for all slices even cheesecakes the cold ones (in the recipe with the rasp jam or any jam u need to mix the egg before adding coconut and sugar) the choc base topped with marshmallow is delicious sprinkle coconut on top so it wont be sticky kids love it

I buy the homebrand packet mixes and cook as a slice in sponge roll tin. Ice with different flavourings for different tastes. Ice with vanilla, lemon, chocolate, caramel, peppermint icing. Or plain icing and sprinkle with different flavoured jelly crystals or else just a plain dusting of icing sugar or castor sugar with spice. Is actually a cheap baking option with the price of butter etc.

old slice recipe you can do anything with as far as fillings go, its quick and easy.
Fillings.
Sliced apple with teaspoon lemon zest, sprinkled with little sugar and cinnamon, apricot jam, raspberry jam, iced and sprinkled with raspberry jelly crystals softened dates, and iced with lemon icing, bake plain top with marshmallow sprinkled with coconut or iced with chocolate icing, berry's, fruit in season are a few.
4 oz butter,4 oz sugar, 1 egg 7 oz flour 1 teaspoon baking powder. In a food processor cause its easy cream butter sugar add egg then dry ingredients mix till combined.
Turn out onto a piece of floured baking paper sprinkle with little flour put some glad wrap over top and roll out.
Remove cling wrap and spread 1/2 with preferred filling, flip other half on top trim paper slide all onto a oven tray bake 180c till cooked and golden.
Cool ice if you want cut into squares. If making marshmallow leave till cold before pouring marshmallow on top.
