And they are yummy.melissarosenz . I had to release the gas over a period of one week when I pickled my lemons. I also used plastic lids. I have stored mine in a dark cool cupboard as I have limited fridge space, to be taken up by two large jars of lemons. They are keeping well, I cannot see that they will go rotten at all.

This post from pickles in the tomato bottling thread reminded me that in the USA they "can" everything whether it's in a can, a bottle, a jar, a crock.
