Parmesan experts?

Hi. Should I chuck out my opened, well past best before date parmesan that has sat in the fridge too long or should it be ok if its not mouldy given that it says aged for 18months! Doesnt smell any worse than usual!LOL
Sorry for a dumb question when most people would just chuck it. or taste it.

Are you talking about a block of Parmesan, or a container of pre-grated!

If it's a block I'd just shave a bit off and see if it tastes OK still.A tiny sliver isn't going to do much damage.

18 mths! I keep it much longer than it says but dont think Ive kept it that long, mines as hard as a rock but still grating it and were not dead yet!

Thats what mine is like, I keepit wrapped in baking or parchment paper. An italian told me to and thought they would know best

Mine went all hard and dryish. still used it didnt hurt me at all but didnt taste as good as when its 'fresh'

Best before isn't Use By.
Should be fine.
