I want to make Roasted capsicum, parmesan dip

with cashews... can any one give me some tips please, i.i., how long do I roast the capsicums and what sort of quantities... thanks so much!

you can put them in the oven or under the grill until the skin is burnt, won't effect the inside, also can drizzle withoil, i just put mine under the grill until the skin is black, place in a plastic bag while hot and the skin will just fall off, or place in dish of cold water. Definitely has a beautiful flavour...

I simply char capsicums over the flame on our gas hobs, holding them with a pair of tongs and turning until more or less black. Then chuck them into a bowl with a lid or covered with cling film until cooled - the skin then removes easily and the capsicums are ready for further processing.

Me too I use a small cake rack for the purpose like a BBQ grill and turn with tongs very quick and efficient.
