Strawberry Shortcake
Just substitute strawbs for the raspberries


1 Cup caster sugar, 1tsp van essence,1/2 cup good quality white chocolate chopped, 2 cups frozen raspberries, 1 egg, 2 cups flour sifted with 2 tsp Baking Powder, 200g butter softened. Line a 23cm cake pan,cream butter and sugar,add egg and vanilla and beat well. Fold in flour and baking powder until well combined.Press 2/3rds into base of pan, spoon rasp and choc over base. sprinkle remaining mix on top crumbling it over, and press down gently. Bake 35-40 min at 180. Cool and cut. Dust with icing sugar. Best served with whipped cream.

White chocolate & strawberry cake. Look for the White Mississippi Mud cake recipe in the search on the left. Add strawberries just before putting mixture in the oven.

Strawberry and Rhubarb Pie! It's an abosolute WINNER! Just love the flavour combination of strawberries and rhubarb and this tart/pie is exceptional!

Not exactly baking but very delicious nonetheless:

Greek Strawberry Yogurt
[Great for breakfast.]

Ingredients:
2 cups fresh strawberries (stalks removed and cut into quarters)
2 tablespoons plus 2 teaspoons castor sugar
2 tablespoons water
1/2 teaspoon real vanilla essence
500g Greek-style yogurt

Method:
Place the strawberries in a bowl with 2 teaspoons of sugar and 2 tablespoons of water, stir. Cover and leave to macerate in the fridge overnight.Drain away any liquid and divide the strawberries in half.Mash half into a pulp with a fork.Place the yogurt in a large bowl and add the vanilla essence and two tablespoons of sugar.Add the chopped and the pulped strawberries and fold the ingredients together.Serve.

Strawberry Tart
250g plain flour
80g icing sugar
125g butter, chopped
1 teaspoon grated lemon rind
1 egg, beaten lightly
500g strawberries, halved
1/3 cup strawberry jam, warmed, sieved
1 tablespoon hot water

Creme patissiere
250ml cream
250ml milk
110g caster sugar
1 vanilla bean, split lengthways
2 eggs
50g cornflour
80g butter, chopped

Sift the flour and icing sugar into a medium bowl. Rub in the butter then stir in the rind and egg; mix to a firm dough. Knead dough gently on a lightly floured surface until smooth, cover pastry with plastic wrap and refrigerate for 30 minutes. Roll pastry between two sheets of baking paper until large enough to line a 24cm loose-based flan tin. Lift pastry into tin; press into side, trim edge. Cover, freeze pastry for one hour.

Preheat the oven to moderately hot (200°C). Cover the pastry with baking paper, fill with dried beans or rice. Place the tin on an oven tray. Bake in a moderately hot oven for about 20 minutes. Remove paper and beans and reduce the oven temperature to moderately slow (160°C), bake about 15 minutes or until browned; cool.

Spread the creme patissiere into the pastry case, top with strawberries. Brush the strawberries with combined jam and water.

For the creme patissiere, bring the cream, milk, sugar and vanilla bean to the boil in a medium saucepan. Whisk the eggs in a large bowl, then whisk in the sifted cornflour. Gradually whisk in warm milk mixture. Return the mixture to the pan and stir over a medium heat until the mixture boils and thickens. Remove from the heat and whisk in the butter. Cover the surface with plastic wrap and cool to room temperature.

Strawberry and chocolate ribbon pie -
CRUMB CRUST
2 1/2 Cups of crushed double chocolate fudge biscuits (I use farmbake)
3 T Butter or Marge melted
2 T packed brown sugar

CHOC RIBBON
1/2 Cup whipping cream
1 Cup choc melts (milk or dark)

STRAWBERRY FILLING AND GLAZE
2 - 3 punnets ripe strawberries, rinsed and hulled
1 Cup Sugar
1/4 Cup Cornflour
1/2 Cup Water
1/3 Cup Strawberry Jam
2 T Lemon Juice

Crust: Lightly grease a pie plate. Process biscuits, butter and sugar in a food processer until finely crushed and mixture is moistened. Press over bottom and sides of pie plate, place in freezer to firm crust while proceeding.
2) Chocolate Ribbon: Heat cream in small pot or microwave just until steaming hot. Remove from heat and add choc melts. Let stand for 2 mins for melts to melt, then stir until thick and smooth. Spread over bottom of crust. Refrigerate or put in freezer to set choc
3) Filling and Glaze: Whisk Sugar, Cornflour, Water, Jam and Lemon Juice in a medium pan until blended. Add 1 cup of berries and mash with a potato masher. Stirring constantly

Another thing you could do with your strawberry glut if you can't eat them all fresh, is to make stewed rhubarb and strawberry. Cut young rhubarb stalks into inch long chunks. Add sugar to the pan and gently cook till the rhubarb is soft. Don't walk away from the stove as the pan may "catch' with the sugar in the recipe. Just before the rhubarb has completely softened, stir in some strawbs (cut up if big ones). Leave to cool. I put it into pots to freeze. When strawb season has finished, it is nice to have on muesli and yoghurt for breakfast.

Try this
Strawberry Pickle

Ingredients:

5 large strawberries (adjust the amount to fit the jar used)

1 green banana pepper

1 1/2 cup water

1/4 cup vinegar

1 tsp salt

1 tbsp sugar

Sterilized Jar with lid

Method:

Wash strawberry and pepper in running water and pad dry.

Arrange strawberries and pepper in the clean jar.

Combine water, vinegar, salt and sugar in a medium pot and bring to boil. Allow to boil for 5 minutes, turn off the heat and let it cool down.

Once the solution cool down, pour it in the jar. Strawberries and pepper should submerge in the liquid.

Close the jar and keep aside for 3 days.

Refrigerate after opening.

l have a recipe for a pie which was blind bake a sweet short pastry and cool then slice strawberries over base and mix up filling
in a saucepan mix 2 tab cornflour with 1 1/2 cups water and 1/2 cup sugar
Stir over a low heat till it thickens simmer for 2 minutes add 1 packet of strawberry jelly and let cool then pour over strawberries
