we've just got our homekill lamb for winter and id like to do something tasty with the flaps. any tried & true recipes? something spicy would be nice (theyre definately not going to the dogs as these ones arent that fatty)

hey chook. . last lot I did I rolled mushrooms and bacon inside them hog tied. . then slow cooked in home made chicken stock. . then uncovered for the last half an hour to brown up (3 hours all up)
Not spicy I know but still yummy. . next time will be rolling smoked kranskis thru them.

ditto maxy ive been browsing and was thinking along the lines of stuffing/rolling/crock-potting- all day then a quick roast to crisp it before serving... . . i love making stuffings so its gotta be worth a try... ... the past year of dagging, worming & toe nail cutting the wee buggar has paid off!
