Stuffing for chicken

anyone got a good stuffing recipie for chicken?

I use a very basic (and flexible! ) one.
To one cup of breadcrumbs I add, 1 small onion, diced, 1 teaspoon dried mixed herbs, one beaten egg to bind (if eggs are in short supply I substitute with equal amount of milk).
If to hand I add, 1 - 2 gloves of garlic, finely chopped, grated rind of 1 lemon, handful of chopped parsley or any other fresh herb you have to hand which you fancy

I just take a lemon (a Lisbon for me but you can use Meyer), slice, salt then stuff between the skin and the flesh and any left over can go into the chicken. Yum. Lemon flavoured chicken. The slices under the skin caramelise during roasting and can be eaten as well.

Some sprigs of Fresh Lemon Thyme plus a dob of butter along with lemon is very nice.

Also do what buzzy110 with the skin part also with a little bit of butter, just gives that nice tangy crispness to the skin.

1 large onion, chopped /sauted gently
25g butter
200g fresh white breadcrumbs
4 sprigs of italian Pasley ( chopped)
1 lemon, zest only, grated
2 tsp fresh thyme
1 egg, beaten
