2 cups grated cheese 4 rashers bacon 2 tomatoes chopped 2 spring onions ¼ cup creamed corn 4 eggs 3 tbsp sweet chilli sauce 4 cups self raising flour 2 cups milk ¼ cup seeds Mix cheese, chopped bacon and tomatoes, spring onions and corn.Add eggs and mix well, add flour, milk and chilli sauce and combine to make a sticky consistency.Put into large greased muffin tins.Sprinkle with grated cheese and pumpkin, sesame or poppy seeds.Cook @ 180 degrees C for 30 minutes.
Use 3 tbsp of basil pesto and an alternative to sweet chilli sauce.

AVOCADO, BRIE AND SMOKED CHICKEN MUFFINS - thanks to brianmac (aka cookessentials)
3 cups plain flour- Pam added a note that “I always use high grade” 2 tsp baking powder ½ tsp salt 1 tsp dried mustard 125g brie, diced ½ smoked chicken breast, diced 1 avocado, stoned, peeled and diced (not too small-good size chunks) 1 cup grated cheddar cheese 2 eggs 1¾ cups milk 100g butter, melted and cooled
Sift the flour, baking powder, salt and mustard into a bowl. Toss through the smoked chicken, avocado, grated cheese and half of the brie. Make a well in the centre. Mix together the eggs and milk, then blend the wet ingredients into the dry ingredients. Divide the mixture evenly between 12 well-greased muffin tins. Top each with a piece of the remaining brie. Bake at 220°C for 18-20 minutes. Cool in the tins for 5 minutes.
KUMARA AND BACON MUFFINS - thanks again to brianmac/cookessentials who added the following note: "This is actually a recipe from the "Kiss diet book" believe it or not; but believe me, they are yummy. The recipe only makes 6 though,so you may want to double it. Great for lunch with hot soup."
1 cup flour 2 tsp baking powder pinch each of salt and freshly ground pepper 120g kumara, cooked and mashed-no butter! 100g tasty cheese, grated 1 medium onion, finely chopped 1 bacon rasher, grilled and chopped handful parsley, chopped 1 egg ½ cup trim milk
Into a bowl sift the flour, baking powder, salt and pepper. Add the kumara, cheese, onion, bacon and parsley. Lightly beat together the egg and milk and fold them into the muffin mix. Spoon into 6 lightly-greased muffin tins. Bake at 220°C for 15-20 minutes - use a skewer to check if they are cooked in the middle.:-))

SAVOURY CHEESE MUFFINS -1 ½ cups Flour,1 pkt Leek and Potato Soup Mix, 1 tbsp B Pdr, 2 ham slices (finely chopped) ½ cup grated tasty Cheese, 2 tbs Parsley (chopped), 50 grams butter (melted) 1 cup Milk, 1 Egg (beaten), ½ cup grated tasty Cheese to sprinkle on top. Mix the dry ingreds into a mixing bowl. Add liquid ingreds. Fold all together, until mixture is damp, stopping as soon as the dry ingreds are damp, but before the mixture is smooth.(Use a metal spoon.) Spoon the mixture into the well-buttered muffin pans and sprinkle the second amount of cheese on top. Bake at 200 deg for 12 – 15 minutes, until the tops are golden brown and the centres spring back when pressed slightly. Leave in tins for a few minutes (not too long or they will be hard to take out.) Serve warm, or reheated briefly. ( squeeze water out), ½ cup chopped bacon/ham, stir lightly (don’t over stir) until combined. 1 1/2 cups plain flour, 1 ½ teaspoon of baking power, ½ teaspoon salt, Spoon mixture into tins. BUTTERLESS CHEESE PUFFS
2 Eggs water
Salt pinch 2 C Flour 2 1/2 tsp BP
1 C Grated Cheese 1 C veggies of your choice
Break eggs into 1 cup measuring cup and fill with water then pour into bowl, then add another 1 cup of water to a bowl and mix.
Mix dry ingredients and add veggies and cheese and mix.
Add dry to wet and mix till JUST mixed.
Spoon into greased muffin trays.
Bake 20 mins at 180
I like to add a "little bit" of cayenne pepper too:)
i love having bacon, onion, carrot, courgette and red capsicum in mine cant find my recipe at the moment but here are two you could use, but havent been tryed.
Savoury Muffins
1 cup white flour 1 cup wholemeal flour 3 teaspoons baking powder 3/4 cup grated courgette 3/4 cup grated carrot 1/4 cup chopped capsicum 1 small onion, chopped 1 tablespoon chopped parsley 1/2 cup grated cheese 100g margarine, melted 1 cup milk 1 egg
Sift flours and baking powder into a mixing bowl and combine with courgettes, carrot, capsicum, onion, parsley and cheese.
Mix margarine, milk and egg together and add to dry ingredients. Do not overmix.
Divide mixture into muffin trays (silicone ones are the best!) and bake in moderately hot oven, 190degC, for 20 minutes.
Turn onto wire rack when cool. .- .- .- .
Basic Muffin Mix 2 cups self raising flour 1 cup grated cheese 1 cup milk 1 egg 125g melted butter Salt and pepper to taste Your choice of filling ( 1 ½ cups)
Fillings: Choose from: Ham, chives, mixed herbs, sun-dried tomato, feta, spinach, onion, mushrooms, capsicum, bacon, grated carrot or zucchini, corn kernels, asparagus, grated parmesan, leek, pumpkin, etc. *Experiment with your own combinations
Preheat oven to 180°C.Combine sifted flour, salt and pepper and grated cheese in a bowl. Mix well until cheese is separated and coated in flour. Add sautéed or chopped ingredients. Whisk together milk, butter and egg in a jug and fold into dry ingredients. Do not overmix.Place tablespoonfuls of mixture into non-stick muffin trays and bake for 20-25 minutes until cooked through and lightly golden and crunchy on top. Suitable to freeze. Good for school lunches.

omg just made these they are sooooo yummmyyyyyy. i put in a little extra flour 1/4 cup maybe, milk and butter, wayyy more vege (onion, red caps, grated carrot and courgette) and also bacon and a cup of cheese, i am not a baking whizz but still found it easy to adapt slightly to that :) and they are YUMMMMM :)
