I have a lovely one - I think I got it from the 'requests' section of the Cuisine mag.

THORPS COFFEE HOUSE Pumpkin, Spinach & Feta Muffins.

1/2c melted butter
2 eggs
500g pumpkin (1cm cubes, steamed'til tender)
300g feta (cubed or crumbled)
100g spinach (cooked, chopped)
10 sun dried tomatoes (chopped)
200g grated cheese
190ml milk
s&p
2 1/2c flour
2 t b powder.

Mix wet ingredients.
Mix dry ingredients.
Lightly combine.
180c oven.

Makes 12 large muffins.

Ooh, tixy- I just LOVE Thorps coffee house and we always go there for breakfast when ever we are in Napier - then shoot across the road to Chantal organic foods. I will certainly be trying that recipe, thanks for that!

Hi there. It was nice to come across this as I am the one who used to make these....thousands of them over many years at Thorps. I have made many different varieties of muffins if I can ever help :)
