Bump, would be interested too, my last lot of muffins was pretty average. Think I may have over mixed them.

I got this recipe from here sometime ago, and they are truely the best muffins I have ever made.
2c grated cheese, 1 1/2c flour, 3tsp baking powder,1/2 tsp salt, 1Tbsp sugar, 1 egg, 1c milk.
Sift flour, baking powder & salt in a bowl. Add sugar & cheese, finely chopped onion, bacon (raw) & chopped tomato. Mix lightly a couple of times. Fork egg & milk together till combined. Add to dry ingredients. FOLD LIGHTLY until just mixed.
Cook at 220 c for 12-15min. This makes 6 texas muffins.
I sometimes add corn, and grated zuccinni.

Add a little pickle to your scone or muffin mix - adds an extra level of flavour.
