How does Ginger, Sweet Chilli and Coconut Cream Chicken sound! It's a Jo Seagar recipe that is very quick and easy:
2 tablespoons oil 4 large skinless and boneless chicken breasts, sliced ( your chicken thighs will do fine) 2-3 cloves garlic, crushed 1 tablespoon of grated fresh ginger 1 small onion (or 2 shallots) finely chopped 1 red capsicum - deseeded and chopped grated rind and juice of 1 lemon 1 x 200g tin of bamboo shoots, drained 1 x 400g can coconut cream 200 ml sweet chilli sauce 5 spring onions 1/2 cup chopped coriander leaves (or parsley) plus extra coriander to garnish
1.Heat the oil in large non-stick frypan and fry the sliced chicken for 6-7 mins.
2.Add the garlic, ginger, onion and capsicum and fry together for a further 2 mins
3.Once the onion has softened, add the lemon rind and juice, bamboo shoots, coconut cream and sweet chilli sauce
4.Turn the heat down to a simmer and cook for 3-4 minutes.
5.Add the spring onions and coriander, stir through and serve with rice and garnished with a little extra coriander.

Hmm we are having chicken cacciatore tonight. Thats always quick and easy and works well with boned pieces :)

I just spinkle Soya Sauce along with Chicken Stock & Pepper & Salt & Bake in oven on 150 till cooked.

last night I did apricot Chicken. smothered them with low sugar apricot jam, browned them first in the frypan the cooked them covered at 200*C for 30 mins, before taking the cover off then cooking for 10 more mins. ended up flaking off the bone and the skin was deliciously sticky.

Here's a favourite of ours - I cook it in the crockpot and use chicken thighs as well. I copied it from here, but unfortunately didn't copy the poster - sorry. Chicken and Kumara Casserole Chicken Drumsticks (your choice of #), 1 – 2 kumaras, peeled & cut into chunks. ½ large leek (optional) sliced, 1 tsp chicken stock pdr, ½ tsp whole grain mustard, ½ tsp crushed garlic, rind of 1 orange (optional), 1 tbsp cornflour, ½ cup orange juice (or Raro), ½ cup water.Place chicken in casserole dish. Cover with chunky pieces of kumara and sliced leek. Sprinkle all with the chicken stock, mustard, garlic and orange rind. Blend cornflour with orange juice (or Raro) with the water. Pour over chicken, cover and bake slowly for about 1½ hours. In the crockpot, I cook it the same time as any other casserole type recipe. Enjoy.
