I invented a "scuffin" Last night, (Scone/Muffin) I had 2 brown bananas and no lunch box fillers. and I was tired. so here is what I did
Toadies Banana & Choc Chip Scuffins.
In a Large Bowl. Mash 2 Bananas Add an Egg 1/4 cup Oil (or 50gms of melted butter - oil is easier - I didn't measure just put a glug) handful of chocolate chips, about 1/2 cup. Mix well Add 3 cups of flour and 1 Tablespoon of Baking Powder (or 3 cups self raising) Mix to a wetish mixture with milk. Put 12 dollops (Closish so they just join when spread) on a baking tray that has been lined with Baking paper. Bake at 180 fan for about 15 mins
DELICIOUS warm and we all have a lunchbox treat today. Took about 5-10 mins, could not have been easier.Just wash out one bowl and scraper. My DD asked what i was making and I truthfully said. I don't know. I am freestyling lol.

Made today and they were delish - made even easier - as the bananas were from the freezer they thawed soggy so threw them, eggs, sugar and oil into bowl, quick beat (Didnt worry about castor sugar) Added the rest and some sultanas
