Hi, has anyone got a recipe for a slice I had today at Muffin Break - it has a crunchy cake base, thick caramel on top and then a mixture on the top with rolled oats walnuts I think coconut! would be much appreciated!

CARAMEL OAT SLICE Filling: 50g butter 1 tbsp golden syrup ¾ cup sweetened condensed milk
Heat until the butter has melted and the ingredients are well mixed.Cool. Base: 175g butter ¼ cup sugar 1 tsp vanilla essence 1½ cups flour ½ cup rolled oats
Mix well, then press ⅔ of the mixture into a greased 30cm x 20cm tin.Spread the filling over the base and sprinkle the remaining base mixture over the filling. Bake at180ºCfor30-35 minutes.Cut when cool.
PUKEKO JUNCTION CARAMEL OAT SLICE Base: 200g butter, softened ½ cup brown sugar ½ tsp vanilla 1½ cups plain flour 1 tsp baking powder
Cream the butter and sugar, add the vanilla, then fold in the flour and baking powder.Pack the mixture into a baking paper-lined sponge roll tin or 20cm Ø tin. Fan-bake at160°Cfor15-20 minutes, until a little browned, then over the base pour the Caramel: 125g butter 2 tbsp golden syrup 1 x 395g can sweetened condensed milk
Into a microwave-proof bowl place the golden syrup, condensed milk and butter.Microwave for 3 minutes, then whisk - it will thicken but it takes a while. Over the caramel sprinkle the Oat Topping: 1 cup rolled oats ½ cup each ofbrown sugarandshredded coconut 80g butter, melted
Mix the rolled oats, brown sugar, coconut and butter. Fan-bake at180°Cfor10-15 minutes.Refrigerate well before cutting and serving with Orange Sauce: 2 or 3 oranges (see note below) honey arrowroot (optional)
Cut the oranges into pieces and place them in a bowl with honey to sweeten to taste.Microwave for a couple of minutes, then thicken if desired with arrowroot. Note:The number of oranges depends on the amount of sauce that is required - Pukeko Junction serve it over the caramel slice with either yoghurt or cream.

Lol Sam, I was just reading through the thread and worked out it was better to bump rather than keep going back to c&p - iPads are great for some things but others not so much. :)
