Makes 5 logs. 3 cups organic prunes (with the stones removed) juice of one lemon 2 tablespoons of raw honey 1/3 cup of walnuts
Put the prunes into the food processor and poor over the lemon juice. Set aside for 1/2 hour to let the lemon juice soften the prunes. Add the honey in with the prunes and lemon juice and pulse the food processor until just combined. Turn the mixture out into a bowl and crumble in the walnuts with your hands. Stir well and refrigerate for an hour. Divide the mixture into 5 and form log shapes with your hands. Tightly wrap the logs in clear cellophane and tie off the ends with ribbon.
