Moist date loaf
Any dried fruit can be used instead of dates

Ingredients
2 cups dates
2 cups boiling water
2 tablespoons butter
2 cups sugar
3 cups flour

2 teaspoons baking soda
1 egg
Recipe Tools
Method
Preheat oven to 180 C

Put dates, water, butter and sugar into a saucepan and bring to the boil.

Remove from the heat and add the flour 1 cup at a time,
beating well at each addition.

Next add the baking soda and lastly the egg.

Mix thoroughly and put into 2 well greased loaf tins.

Bake 45-50 mins

Any dried fruit can be used instead of dates

Here's one for you 2sabar - I not only found this recipe for you, I absolutely recommend it because it's a favourite of ours and a special favourite of my elderly Mum's.

DATE (and NUT) LOAF
1 cup each ofdatesandboiling water
1 tsp baking soda
¾ cup brown sugar
1 tbsp butter, softened
1 egg
1½ cups flour
1 tsp baking powder
pinch salt

Place the dates in a bowl, then pour the boiling water over and sprinkle the baking soda over.Cover the bowl and leave until cold (overnight is ok).
Mix the brown sugar and butter, then add the egg and beat together until thick and spongy.Add the sifted flour, baking powder and salt, alternately with the date mixture.Place in a greased loaf tin.Bake at180°Cforabout 1 hour.
Variation:For a nice mixed fruit and nut loaf add, with the dates, about ½ cup sultanas and a few chopped nuts.:-))

This is the one I make using my sticky date recipe

340g dates
500ml water
2 tsp baking soda
Bring above to a boil, turn off and let it cool.

Beat
150g soft butter,
340g dark brown sugar (can use light brown as well)
till soft then add
4 eggs
one at a time.

Add a tsp of vanilla to your cold date mixture, then add alternating with 400g of self raising flour.

All this can be done in a mixer at low speed when adding flour. Add a cup of chopped walnuts in the end. Makes one big loaf. Bake at 180c for an hour or until cooked.

I have masterclass medium baking loaf tins. Not sure if you will enough mixture for two. You can make one tin and put the extras in muffin pan. If you take the nuts out then it makes a nice sticky date puddings. Just need to make the sauce then.

Date & Walnut loaf

Ingredients
240g (1 1/2 cups) pitted dried dates, halved
310mls (1 1/4 cups) water
100g (1/2 cup, firmly packed) dark brown sugar
80g butter, cubed
Melted butter, for greasing
300g (2 cups) self-raising flour
1 1/2 tsp mixed spice
2 eggs, lightly whisked
1 x 100g pkt walnut pieces
Method
Place the dates, water, brown sugar and butter in a medium saucepan. Cook over medium heat until the sugar dissolves. Bring to the boil, reduce heat to medium and simmer, uncovered, for 2 minutes.
Remove from the heat and pour into a heat-resistant bowl. Allow to cool for 20 minutes.
Meanwhile, preheat oven to 170°C. Brush a 9.5cm x 19.5cm (base measurement) loaf pan with the melted butter to grease.
Sift the flour and mixed spice into a large mixing bowl. Add the eggs to the date mixture and stir to combine. Pour the date mixture into the flour mixture and use a wooden spoon to combine. Add the walnuts and stir to combine.
Spoon the mixture into the greased pan and bake in preheated oven for 50-55 minutes or until a skewer inserted into the centre of the loaf comes out clean. Turn onto a wire rack to cool.
