mmm, i always buy these at countdown or pak/sve, but guess you could just use an ordinary recipe, and maybe put in 1-2 teasspn of coffee or maybe half a cup of black coffee. let us know how you made them

Coffee and Walnut Muffins
2 Tb instant coffee,
1/2 cup hot water,
1/2 cup milk,
1/2 cup canola oil,
1 beaten egg,
1, & 1/2 cups selfraising flour, 1/2 cup sugar, 1tsp salt, 1/2 cup walnuts, Dissolvecoffee in hot water, add milk, oil, beaten egg, mix in sifted flour, sugar, salt, & walnuts , makes 12, bake 15- 20 min at200 . seems a lot of coffee, but needs it, other wise coffee flavour is too weak. also is a wet mix, maybe a little less liquid would be ok, but I made these as recipe stated & were fine.
