I don't really like bread based stuffing, and bearing in mind i am going to wrap them in either streaky bacon or proscuitto what are some nice ideas for stuffing?

Cream cheese, spinach and toasted pine nuts. Or maybe pesto.

apricot and cream cheese sun-dried tomatoes, cheese dates and chopped bacon
If you stuff them I think they're nice when you douple dip them and them crumb them (my opinion)
