Left over Roast Pork

Any ideas to use up quite a bit of pork, was going to make hot sammies but could probably put a bit more effort in. Thanks

Slice, put into oven proof dish, drizzle with honey, warm through in oven.
or
Sweet and Sour pork is yummy and easy -
1 small can pineapple chunks and juice
1 Small carrot grated
1 onion chopped
1/2 cup tomato juice
1/4 cup brown sugar
1/4 cup vinegar
1/4 cup honey or golden syrup
1 1/2 tablespoons cornflour
1/2 teaspoon chopped garlic
1/4 teaspoon mustard powder
1 tablespoon Soy sauce
1/2 teaspoon ground ginger
Mix all together and cook over medium heat until thickened and sauce is shiny. Add cubes or slices of pork and stir till warmed through.

I always make risotto from leftover roast (assuming you already made stock from the bones, or have the bones left to make stock from). Just make a standard risotto with the pork stock and then fling in a good handful or two of shredded roast pork. Veg, too, whatever you like to go with it, and a few herbs will be good. I'd maybe do some fresh fennel in a pork risotto, or fennel seeds if I couldn't find any.

Make a light brown instant gravy, add sliced pork and heat gently! Yum!

Pork Fritters - just make a regular batter, add pork (chopped or minced), grated apple and grated onion, season - cook same as pikelets.Yummy and so easy!

We like adding to BBQ pork flavoured rice risotto (the packet one).
