Feijoa Walnut Cake cont. Turn into a well greased 25cm cake tin and bake for 45-50 mins.Cool in the tin.Sprinkle with icing sugar & serve.a wonderfully moist and delish cake.
Also can use this recipe to make banana cake by replacing feijoas with 2 peeled & roughly chopped bananas.
These are 2 really easy (and delicious) cakes. Have had these recipes for years, they're by Glenda Gourley.

But wait.there's more! Feijoa & Apple Muffins: 2 eggs,1/2c milk,1/2c oil (rice bran oil is tops in my (recipe)book)1c sugar,2tsp cinnamon,1tsp nutmeg,2tsp baking soda,4c S-R flour,3/4c roughly chopped feijoas,3 medium apples,cored.
Place all ingredients except the flour into food processor,whiz till combined well,add flour,pulse till mix looks like lumpy porridge,spoon into muffin tins,bake 200c for 15mins. easy,quick & moist muffins.

In the above muffin recipe the apple & feijoa skins can stay on if you wish.or peel.up to you.Variations on this recipe are apple & berry (4 apples,1c berries,fresh or frozen(blueberries are yum)and are not added to mix but pressed on top of each muffin.And apple & rhubarb muffins:2 apples,4c rhubarb,roughly chopped.
All variety's are really yummy,and are all from Glenda Gourley.also have recipes for kumara (or pumpkin) & orange muffins and mini carrot (or courgette) cakes.if any one would like them.
Does anyone still grow rhubarb!

Great thread! Does anyone in Tauranga have any to spare? Am happy to come & pick up off the ground. We are crazy for feijoas and our trees have hardly any. Please, please, please!!!:o)

They freeze well whole, great for fruit smoothies and on winter porridge with brown sugar.

O man you guys are lucky living where these lovely fruit grow.I have a tree which has grown heaps over summer but no fruit this year.We used to get fruit off our tree at our old house.I bought some off TM and they arrived yesterday, I have to say there won't be any left by the end of the weekend.I will ferret some away so I can bake with them me thinks.I got told today the apple and feijoa cake is to die for

Hi Zodiacgal. your recipes sound mouthwateringly delicious.yes. rhubarb is growing here - and there must be in lots of gardens still as threads pop up quite often with people asking for rhubarb recipes. I've seen a recipe for Rhubarb cordial which is my next recipe to try using it.

Barloo I made that cake this morning and just softened the butter, it worked really well and I took it for lunch to my daughters equestrian event and it has alllllll gone!!I added 2 apples to the food processor and an extra 1/2 cup of flour.Yummy

When a feijoa fecipe calls for peeled feijoas, can you just scoop out the middle?Peeling sounds sooo messy.

Today I just scooped out the middle and threw that with the apple in the food processor, i had all the other ingredients ready as feijoas do go brown real quick.

Just made this and used the tag ends of unwanted pickled onions. Onions in food processor, feijoas in processor=whizz, measure vinergars from onions and add Kenny's stuff.It's LOVELY.
