Think you may find people tend to go for savoury rather rather sweet. However you can freeze Leemingtons, Brandy Snaps then cream on the day.

Mini bonafee pies, make sweet short cases an cook them, piece of banana in the bottom, top with caramel and freeze, on day cream and another piece of banana. yummy.

oh chooookkkkyyy!I looove that idea - yum! might give the lemmingtons a miss, don't really want coconut all round venue. brandy snaps are always popular so might do it easy and buy those readymade :)
