Don't make in too big a pot unless you are stroganoff to pick it up !

wineo, if your stroganoff has, and would still have, sufficient flavour simply add some water - IMO it would be best that it be hot water that you add as you really don't want to have to reheat the stroganoff too much now that you have added the sour cream.:-))

thanks all, added 1 cup of beef stock right consistency now, and tastes great

You did the right thing with the stock. Red Wine gives a different effect when added at the end which probably wouldn't be so good in a stroganof it really needs to be cooked out.
