I use brown ( malt) vinegar, 2x bayleaves, half a dozen whole cloves and 1-2 tbsp soft brown sugar. Just add enough water to just cover the meat, then add these ingredients.

I always throw a couple so chillies in as well, just lifts it and gives it a bit of zing!
