Hi there

Do supermarkets microwave their cupcakes!Just wondering why none of the bought cakes / cupcakes, have that baked tinge of brown that yummy oven baked goods have. are they undercooked, or microwaved!

Baking mixes is what they use. Generic whole bag pre-mixed ingredients only to ensure a perfect, bake, look-and-feel everytime. All pastry products are brought into the store as a pre-made and frozen products. This ensures there is consistency across the product lines.
Imagine the compliants, if one line of product was not like the others.

Horrid mass production, is what we find at supermarches.

Very much so.

They're just pre-mixes. lots of people use the boxed cake mixes and things.A big factor woud be the ovens, baking multiple trays at the same time.I find the same with cuppies, at my commercial kitchen there might be a few on the top tray browned, the rest when they're 'just' cooked aren't.At home, they brown better.

I find a lot of the supermarket baked goods are underbaked or just cooked.
I can't stand to eat the muffins and cakes now, the premix all tastes the same and it's got a disgusting texture in your mouth.
