Help! My cupcakes are peaking.

I had this trouble the other day and now this morning with them cooking to a peak. I have done nothing different. They are usually nice and flat for icing. Any suggestions please?

Someone mentioned on another baking thread about not using fan bake with cakes etc.Makes sense actually.So try again on normal bake.

My muffins peak when they are over-mixed.

Thanks for the suggestions. I used normal bake and used the food processor as normal (Nigella's Cup Cake recipe). They are for a baking stall so I want them to be right. I might cut the tops off and "butterfly" them and use them at home if they don't look right.

I have just made another batch and put the temperature down to 180 and on fan bake. They seem to have come out OK, thank goodness.

i do this for cakes and muffins - i just use a clean lint free tea towel and squash the tops down for icing them lol
