jrsg, post#136 "OK, this is a great traditional-type carrot cake, with excellent taste and texture, though a special-occasion version rather than an el cheapo one. It's being demolished behind me now. BTW I baked half a mix in a 23cm ring tin, which was just the right size. Thanks hairchopper! annie.nz (90 )3:45 pm, 18 Apr":-))

tin size Hi I baked 2 one in a 30cm round tin and 32cm x 22cm rectangle tin. You will love this cake! ! cheers

jrsg, Apr 25, 6:56am
svx1 Was that 2 cakes from the one lot of mixture? I, m having a go tomorrow as I have everything except enough CARROTS! ! ! ! ! lol

svx1, Apr 25, 7:06am
hiya... No its 2 mixtures I made 1the first in the round tin, the nextdayI made in the rectangle tin but in the second cake I cut the oil down to 1 1/4 cups and 1/2 cup of orange juice and rind of 2 oranges and thats the way I am making it now as I prefer less oil and the orange makes it just super devine! ! Also in the round tin I found I cooked it for 1. 20mins and the other tin only 1 hr my oven cooks fast. Just keep an eye on it when cooking as eveyones ovens are different, enjoy! !

thanks for the tips My oven cooks at a higher temp than what it shows. In fact its the next thing on the big shopping list. I can almost smell the cakes! A favourite lunch place where I live in Whangarei closed down some months back and everyone was so sad as they had the best ever sausage rolls. We were cheeky enough to go over and ask for the recipe and lucky enough to be given it. Its always worth asking places for recipes as some don't mind giving them away.

In the oven now in my big 28cm round cake tin! ! ! Tastes pretty good raw- will be freezing it and icing it next weekend for a big family get together before we go to visit daughter in the UK. First use of my big tin which I bought from More Wilsons last year for other daughters wedding cake- only she decided on square and not round - so now I have a lovely set of new round cake tins and had to scrounge around for square ones to borrow!

Well, I have to say this is a fabulous cake- had the family around to celebrate an 80th birthday and another birthday- it really is a drop dead georgeous cake. Made it in my big round tin- looked and tasted stunning, fed 11 of us with enough for people to take home as well- had so many complements! ! ! ! ! Thanks for a great recipe- every carrot cake lover should try it! ! ! !

I have this in the oven as I type, it been in the oven for 40 mins already & the house is smelling devine. I did 1 & half of the recipe and it has filled up my large square silicone Cake baker and a small ring tin... both to the top so they should be nice and deep.

The smaller ring tin will be eaten tonight as we have a family of 5 coming to dinner... (plus our 4) so that will be polished off.

My question is... the large cake is to take to work on Wednesday.
I think I should be Ok sealing it in my tupperware cake taker and icing it Wednesday morning (cream cheese icing).

Do people think this will keep ok or shall I wrap it and freeze it tonight and pull it out Tuesday night.

My instincts is that with all that oil and carrots it will be fine but would appreciate other bakers opinion.

There is alot at stake here as I am known as a "domestic goddess" at work (all in good fun) so my reputation is on the linelol.

Thanks in advance.

Where's the carrot?

pam.delilah, Jun 21, 6:29am
this is the rest of the recipe with the carrots

Mix all the ingredients together (ingredients above)
add 2cups -750gm grated Carrots mix well

whisk up 1 1/2 Cups oil with
4 eggs
add
2 tspn Vanilla
Fold Carefully into the dry ingredients

DO NOT OVER MIX
Bake at 170oc for up to 2 hours keep an eye on it,
Don’t forget to line the tin, roasting dish size makes 1 large cake
Half of the mix in a 23cm ring tin takes 35 mins to cook

Ice with cream cheese icing
1/2 block philadelphia cream cheese, not lowfat, not easy spread, chopped.
50g butter, melted.
Mash together till blended (will be a bit lumpy).
Add icing sugar to taste, and beat until icing is fluffy
add juice of one very fresh lemon and 1/2 tsp vanilla

What type of oil did you find the most satisfactory? I have tasted the original cake a year or so ago and it was YUMMY. ! !

motueka carrot cake Just made the cake up last night and it really is a good recipe!just a little sweet side, next time i will cut the sugar to 1 1/2 cups sugar.
I didn't have pumpkin seeds so i put sunflower seeds instead. and also put cranberries. prolly think about taking the cake out in 1 3/4 hours.
