Re the keeping I think the cake would be fine until Wednesday - I have kept it for three days and iced it just before I used it.Its a great cake and should maintain your reputation well.

lol...I asked that question back in June... But you were right... I am officially the cake lady at my work now.This cake went down particulary well.I make all the birthday cakes and have made Mels Chocolate Cake, a great banana cake... and a particulary nice lemon syrup cake... with sourcream in it.mmmmm will have to get thinking for the next birthday.

I made the carrot cake again in a large round tin on Thursday Night for a family get together yesterday... It really is a lovely recipe.. although I am yet to add a cup of walnuts as I am not a big fan of them (and it really is all about me lol) And it doesn't feel like its missing anything.. the pumpkin seeds is a really nice touch and I sprinkle some diced apricots andpumpkin seed on the top of the cream cheese icing... looks just like a "cafe" cake.

I was in Motueka yesterday ... so I had to have coffee & THE cake. Still scrumptious!!! I'm going to make it as my birthday cake in a few days time .... as well as the 'bloody good chocky cake' for those who need their chocolate fix!

Instead of oil, try making with butter instead, lovely and moist.

Hi. Thanks from me too Hairchopper. :-) I made the cake on Saturday - I used 1/2 grated fresh pumpkin and 1/2 grated fresh courgette in place of the carrot - very nice - and popular with a large group for a Birthday cake.

Fishheadsoup. I made two round cakes - one 25cm across, the other 20cm across - the tins were both 3/4 full when cooked.

Or as suggested earlier in the thread, a medium size roasting dish,or a lasagne type dish would work too.

There's a cafe on the main drag in Motueka that makes the best carrot cake in NZ, no kidding.I've tried recipes from TM cooks and the current threads, but according to my family, I'm still not in the same ballpark.

Does anyone have the real-thing recipe!please! pleeze!

Is it Muses cafe'! attached to the Museum! we were there at Christmas and they had lovely food.

Not sure, it's a modern cafe set just back off the main street as you go west, with outside tables and umbrellas.

Sorry, I wasn't too clear. Heading west from Nelson to Kaiteriteri, on the left hand side of the road.I think just before the centre of town (tho it's a bit hazy, was 2 years ago we were there).Sorry I can't remember the name. (old, losing marbles.)

I do remember it is easy to see, good parking, tables and umbrellas outside, and I think a low white wall as a sort of divider from the street.I don't remember it being part of a museum tho

Is it a bakery as well! We stopped there in Feb coming back from our annual hols in Golden Bay- it had fabulous food- I think it may have been called Continental Cafe and Bakery! We had the carrot cake too- it was pretty good but not as good as the one from Under the Red Veranda ib Christchurch- alas they wont part with the recipe. I was going to do a carrot cake for daughters wedding but after 4-5 tries gave up and settled for Hummingbird cake which turned out really well.

From memory it was primarily a cafe, not a standard-type SI bakery/cafe.I did follow your carrot cake threads with interest, sorry you didn't get the perfect one!I suspect the outstanding ones have some added wet ingredients other than the usual pineapple or stewed apple.*sob*

From your description my guess would be The Moorings Restaurant and Bar. It sells gelato, pizzas, & general cafe food. I'll check if they sell carrot cake & if they do - ask for the recipe.

Hi Annie, some of the carrot cakes I made from here were pretty good but I was comparing them to the ones from Under the Red Veranda- I even bought one to take home and dissect ( at $7.50 for the slice !) but I just couldn't get their texture. Someone suggested using the small grater on your processor to grate the carrots and that certainly made a difference.
I even emailed Jo Segar- she suggested using her Kumara cake recipe using carrots but I gave up by then.

I can't remember as I tried so many recipes. Just about ready to try making another one as we had carrot cake for breakfast lunch and dinner for a while- kidding, they were actually much appreciated by anyone who happened to call in for weeks on end.
Will try one with oil next. I think you are right as the one from the cafe I liked was probably made with oil.
