thats ok Annie we are preparing to move, going down to invercargill so its a big move lots to sort out, Any way it really is a special cake, my friend said as you make it you can add more seed 7 sultanas etc just depends on you, Hope its as beutiful as our was, we froze one cake came out just as nice! YES i think it is roasting dish size

OK... 1/2 block philadelphia cream cheese, not lowfat, not easy spread, chopped. 50g butter, melted. Mash together till blended (will be a bit lumpy). Add icing sugar to taste, and beat until icing is fluffy (I don't measure, but the texture will be good, and it won't be overly sweet. Then add juice of one very fresh lemon and 1/2 tsp vanilla. Hmmmm.could actually be the same as the Edmonds one... *blush*

For a roasting dish size would need to double icing above.

thanks for taking the time to post this recipe hairchopper. I was expecting something very unusual given all the hype thats been created over this recipe - however it sounds very similar to the many other delicious carrot cakes that have been posted in the TMMB over time and which can now be found on Trademe Cooks Forum. Still, looking forward to trying it out.

rkcroft - it's a classic carrot cake, not unusual just very very good. I hope the good bit isnt too operator-dependent though.

The anticipiation is over... lol lol Thankyou so much hairchopper1 i am going to make this tonite and it is beingsent up to Auckland for my daughter and friends to try! ! What do they serve this cake with and also what is the icing the normal creamcheese one and do they sprinkle anything on top? ? Sorry for the added questions I used to go down to SI the (mainland) 2 to 3 times a year for the last 20 years but I havent been down for a few years time to go again I think! ! When I was experimenting with carrot cakes for a wedding cake, a very good bit of advice from here was to use the smaller of the graters of your processor- it did make a better texture I agree.

For the icing for special occasions I sprinkle and press onto the cream cheese icing, equal quantities of chopped dried apricots, chopped preserved ginger, sunflower and pumpkin seeds and sometimes chopped macademia but if I have them. People always comment it was the X-factor.
