Brown Rice Salad

1 1/2 cups brown rice
1 spring onion - cut small
1 red pepper - cut small
1/2 cup currants
60g roasted cashew nuts (halved)
2 Tblsp sunflower seeds
3 Tblsp chopped parsley

Dressing Mix

4 Tblsp soya sauce
2 Tblsp lemon juice
1/2 cup olive oil (more if needed)
1 clove of crushed garlic

Cook rice - cool

Mix dressing mix with everything.

This can be made the day before. But if you do then leave out the cashew nuts and parsley. This you add before serving.

I make something similar but add a teaspoon of sesame oil to the dressing.It's really nice :)

No, its the absorbtion method.I actually do it in my rice cooker.I use 2 of the rice cooker measuring cups to the 3 level. So I am in effect using 1.5 cups of brown rice, doesn't seem to effect the taste, just makes more of it. This is the original recipe before it was tweaked to peoples taste

Toadfishes Brown Rice Salad

1 cup brown rice
1 3/4 cup water
1/4 cup soya sauce (light if available)
1/2 onion finely chopped

Cook the rice in the water & when cooked & still hot add the soya sauce and finely chopped onions let cool (a couple of hours preferably overnight)

Add the following ~
1 red pepper chopped
2 Spring Onions
1/2 cup roasted peanuts chopped ( I leave them whole)
1/2 cup each of roasted sunflower and pumpkin seeds and sultanas.

Dressing:
1/4 cup olive oil
2 tbsp lemon juice
1 tsp grated lemon rind
1 clove garlic crushed
1 tsp fresh ginger
1 tsp honey or Sugar

Mix and pour over salad. Mix well.
I have the dressing in a jar, the nuts etc in a bag and the rice in the fridge and just mix together last minute.

PS - I often leave the capsicum and spring onion out if I want to make it at short notice and have not been to the vegie shop, as the rest of ingreidiants are pantry ones that I alwayshave plenty on hand.

Hey Toadie, i still make your br.rice salad from when i got your recipe many years ago. have made it twice in the last 2 weeks actually. it's good to take to BBqs parties etc as you can make it well in advance, then just add the dressing at the party when ready to serve

I can vouch for the toadfish brown rice salad, as can my husband.we really enjoyed it made especially for us for dinner ( thanks toadfish x)

You need toadfish's one.Look for the thread posted yesterday called "toadies brown rice salad".I've made it myself overnight for a bbq today.

This is it, it is delicious

1 C brown rice
1 3/4 C water

1 diced red capsicum
1/c C roasted peanuits
1/2 C roasted pumpkin seeds
1/w C roasted sunflower seeds
handful of sultana's

Dressing ~
1/2 C olive oil

1 clove crushed farlic
1 t ginger
1 t honey
pinch of salt
