A nice tasty asparagus quiche please

Alison Holst! Think she did a whole book on quiches and self crusting quiches. Might be worth a google search!

Here's a recipe that makes me hang out for asparagus season!
Herby Fritatta wiht Asparagus and Cheddar
6 eggs
1 cup loosely packed, grated cheddar cheese
1 cup cooked kumara cut into bite sized peices (I just microwave mine)
1 cup mixed soft herbs (mint, coriander, parsley, basil) freshly chopped
1/2 Tblsp oil
1 bunch asparagus, sliced
Beat eggs in a bowl, add kumara, herbs and half the cheese.Season with salt and freshly ground black pepper.
Heat the oil in a large frying pan over a high heat (I use a cast iron one) and fry the asparagus for 1 minute until starting to colour.Turn down heat and add the egg mixture and cook gently for 5 - 6 minutes until the base is set.
Sprinkle over remaining cheese then put the frying pan under the grill and cook the frittta for 3 - 5 minutes untl set and golden.Great hot or cold.

Basic recipe Pastry less quiche. Add extras as appropriate.
4 eggs,
1 cup grated cheese,
1 cup chopped bacon/ham
2/3 cup self raising flour [or plain flour + 1 tsp bpowder]
1 onion chopped
salt & pepper
1/4 cup melted butter
1. &1/2 cup milk.
Beat eggs, milk and butter, add bacon, cheese, onion. then flour. season. Pour into baking paper lines cake tin and sprinkle with parsley.
bake 30 mins at 200 c.Extras, add asparagus spears, well drained spinach, etc, but not tomato - it will split.
