jessie981, I'm assuming that you don't have any buttermilk?
Suitable substitutes are yoghurt or milk soured with lemon juice or white vinegar (1 tbsp per cup milk). :-))

Buttermilk in Banana cake makes it lovely a moist can get it at pak n save in the fridge next to the sour cream and cream cheese haven't found it a countdown but not sure about foodtown.

I haven't baked it yet as checked the recipe & it said bake 1 hr @ 275! That seems very hot for a cake. Got the recipe from here.

jessie981, I've had two thoughts re the oven temperature in that recipe... . .
1. That the 275 is 275°F = 140°C - not hot enough IMO 2. That it is a typo i. e. it should read 375 - °F which is 190°C.
I suggest that you use the usual temperature for cooking cakes- 180°C (350°F).
Re the buttermilk - I see that like myself, you're here in Christchurch so you should have no problems in finding buttermilk in any of the supermarkets. As advised in #3 you'll find buttermilk in the chillers - look for a 600ml carton with the brand name Tararua or a plastic bottle of a similar size produced by Karikaas of Loburn. :-))

I can't digest buttermilk so I always substitute it with soured milk.

Butter milk is overpriced, used milk soured with lemon juice, gives the same results

Here tis! 11/2c ripe mashed bananas 2tsps lemon juice 3c flour 1&1/2tsps b/soda 1/4tsp salt 3/4c softened butter 2&1/8c sugar 3 large eggs 2tsps vanilla 1&1/2c buttermilk In a bowl mix mashed banana, lemon juice & set aside. Next bowl, mix flour, b/soda & salt 7 set aside In a large bowl cream butter & sugar until light & fluffy Beat in eggs, one at a time then stir in vanilla Beat in flour mixture alternately with the buttermilk Stir in banana mixture Pour into tin & bake approx (test for readiness) @ 175 Remove from oven & place directly into the freezer for 45 mins. This will make the cake very moist.
