l used my cake box that l make the Christmas cakes in so l think the that was the reason for the longer cooking time with the thicker sides and it didn't get right to the top l thought after that l possibly should have put a piece of tinfoil over the top to stop it drying out too much Hindsight is a great thing :-)) l just cut it now and it is really nice and not crumbly and the top has gone back together when it cooled and l had a taste and like it but the taste of the 1/2 teaspoon of lemon essence has come through strongly so will miss it next time as l am not a fan of that l will put a bit of lemon juice or zest in Thanks for sharing the recipe
