LOUISE CAKE WITH BOUNTY BARS

100 grams butter, softened
1/4 cup castor sugar
3 eggs, separated
1 tsp vanilla essence
2 cups flour
2 tsp baking powder
2 Tbsp milk

1/2 cup red Raspberry jam, strained of pips

3/4 cup castor sugar
4 dark chocolate Bounty bars or Cherry ripe bars
3/4 cup coconut

Preheat the oven to 180 C Put the softened butter, the first measure of sugar, and the vanilla essence in a bowl and beat until creamy. Beat in the egg yolks and put the whites into a clean glass or metal bowl. add the flour and baking powder, add the milk, and mix. The mixture will be crumbly. Press it into a greased and lined slice tin so it's nice and firm in there. Spread it with the jam. Bake for 20-25mins then remove from the oven Slice the chocolate bars and scatter over the jam In a clean bowl, beat the egg whites until stiff but not dry. Add the second measure of sugar a bit at a time and beat until thick and glossy. Fold in the coconut gently. Spread the meringue over the base. Bake for 25 minutes. Let cool completely before cutting

MARS BAR MARSHMALLOW SLICE.
40g butter,
1/2 cup crunchy peanut butter,
3 mars bars (chopped),
1 x 180g packet marshmallows,
3 cups rice bubbles.

Put the butter, peanut butter, mars bars and marshmallows into a saucepan and melt them over a low heat - keep stirring so it doesn't stick to the saucepan.
Pour in the rice bubbles and mix well, then pour the mixture into a greased slice tin, spread and then allow to cool before cutting into squares.

caramello slice

125 grams butter 2 eggs 1 C flour 3/4 C dates or sultanas 3/4 C brown sugar 1 tsp vanilla 1 tsp Baking Powder 1 big size (150grm) Caramello chocolate Melt the butter and sugar, Add beaten eggs and stir well, add rest of ingredients except for the chocolate. Mix then spread half of the mixture into a swiss roll tin. Break up the chocolate into 24 squares and place evenly 4 rows of 6 on base. Spread remaining mixture over the top, carefully covering all the chocolate. Make moderate oven for 20 - 30 minutes. Cut into squares when cold

turkish delight muffins
2 1/2 cups self raising flour 3/4 cup brown sugar - firmly packed, 1/4 cup cocoa powder, 1 egg, 1 1/2 cups milk, 125 g unsalted butter - melted, 4 x 55 g Turkish Delight chocolate bars
Whipped cream and mint leaves to serve.
Chocolate ganache: 1/2 cup thickened cream, 200 g dark chocolate - chopped.

Method: . Grease 12 hole muffin tin (1/3 cup capacity) 2. Sift flour, sugar and cocoa into a large bowl 3. Whisk egg, milk and melted butter in a large jug till combined. Add to dry ingredients and mix, being careful not to over-mix, until just combined. Finely chop 2 x chocolate bars and fold into chocolate mixture. Divide mixture among holes of prepared pan. 4. Cook in moderately hot oven (190 C) for about 20 minutes or until cooked when tested. Stand in pan for 10 minutes before turning onto wire rack to cool. 5. To make chocolate ganache, place cream and chopped chocolate in a saucepan. Stir over a low heat until mixture is smooth and combined. Transfer ganache to small bowl and stand at room temperature until mixture is a spreadable consistency. 6. Spoon ganache over muffin tops and decorate with remaining chopped chocolate bars. Stand muffins until ganache is set. 7. Serve with whipped cream and fresh mint leaves.

Caramello Chocolate Brownies - makes 15
Ingredients
* 125g unsalted butter
* 200g dark chocolate, chopped
* 3/4 cup caster sugar
* 3 eggs, lightly beaten
* 1 cup plain flour, sifted
* 2 x 110g packets caramel Easter eggs or 220gms Caramello Chocolate
* cocoa powder, to serve

Method
Preheat oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, allowing a 2cm overhang at all sides.

Place butter and chocolate in a saucepan over low heat. Cook, stirring, for 2 to 3 minutes or until smooth and combined. Remove from heat. Stir in sugar. Set aside for 5 minutes.

Stir in beaten eggs and flour. Pour mixture into prepared pan. Spread top evenly with a spatula. Press chocolate eggs in brownie mixture. Bake for 25 minutes or until brownie is firm to touch. Cool in pan. Cut into 15 squares. Serve dusted with cocoa powder.

l got a recipe off here that was caramel slice then when you take it out of the oven with the caramel on top you push cut up moro bars and pineapple lumps when cold ice with choc icing
The only problem is my lot looooovvveee it and it is the most requested thing for their birthdays etc or anytime they are coming home
lt is at its best when the pineapple lumps are chewy and the only other problem is having enough lumps to put into the slice as l tend to nibble while cutting them up,lol
Some lovely recipes above l will have to do some copy and paste

grirro4, Can I please have your recipie for your caramel slice. sounds very gooooooooood and I know my family would love to eat it toooooo.
Hope you have time to put it up for us.

l used my own caramel slice recipe and then put the lumps and moro in when it came out of the oven with the caramel on it
Here is my recipe but l am not totally happy with the base it can be crumbly so if other cooks on here can give me advise on what l can do to change that
Not that it makes any difference it still disappears,lol

Caramel slice
125g butter
75g sugar
1 egg
175g flour
1 dsp cocoa
pinch of salt
1 tsp baking powder

Mix ingredients together and press into 20cm square tin
Bake 15 minutes at 180C
Spread with following mix while hot

Caramel
2 tablespoons flour
75g butter
3/4 c brown sugar
1/2 can condensed milk
2 dsp golden syrup

Heat all ingredients together until melted and mixed then spread onto cooked base and put back in oven for a further 10 minutes

Remove from oven and push in cut up moro bars and pineapple lumps

lce with choc icing when cool
l use choc melts and cream melted together for the icing
