Soak in freshly squeezed lemon juice for a few hours until ready: Chicken Tenderloins; Fresh Sage Leaves and Haloumi Cheese. Thread onto soaked fine bamboo skewers, and grill for a few minutes each side.

Buy sliced Rolled pancetta. Use these to line muffin trays and bake until well cooked. Leave to cool in the Muffin tins. They'll go hard and instantly become salty crispy bacon baskets to fill. Keep ingredients fresh and lively to counter the salty crispy base. Minutely sliced Tomato, Buffalo Mozzarella, Basil leaves and a smidgeon of Truffle Oil.

These are a huge hit everytime I make them. Streaky Bacon and Cranberry Chicken Rolls:Take a strip of streaky bacon and place a piece of uncooked chicken (the size of a dried apricot) 1/3 of the way up the bacon.Place 1/2tsp of cranberry sauce (I use the chunky thick, whole berry brand) on top of the chicken and fold over the short end of the bacon strip over the piece of chicken and continue to roll. Secure with a toothpick and bake till bacon looks crispy on 180C.They go fast!

i like smoked mussels. spread cream cheese (thickly) on a cracker (salty type), and top with a smoked mussel, the type you get in a tin. sprinkle with pepper. yummy.
