Hi, has anyone got a recipe for an uncooked cheesecake using condensed milk ,lemon juice and whipped cream...have lost mine...tia

Crust: Combine 1 1/2 cups crushed biscuits, 100g melted butter and pinch of nutmeg. Press into dish and refrigerate.
Topping: Beat 1 tin condensed milk. Beat 1 ctn cream cheese and add to condensed milk. Add 1/4 cup lemon juice and 150ml whipped cream, beating after each addition. Dissolve 1 tbsp gelatine in 1/4 cup boiling water and stir through mixture. Pour into crust and refrigerate untilo set.

danjoboys, instead of using gelatine, you can also use half a packet of lflavoured jelly, have done that myself and it's yummy.

I found 1T gelatine makes for a very firmly set result. I like to use less.
