pork mince +chinese mushrooms which you can get (in dried form) from asian shops/local supermarkets - soaked till soft, sliced thinly +can of water chestnuts (for crunchiness) +prawns (optional) +corriander +pepper, soy sauce, sesame oil, oyster sauce(optional) mix well. wrap in fresh wonton skins(from asian shops) / spring roll skins(thawed) fry in shallow oil. for the wonton, they are yummy when after shallow frying, to add a good splash of stock/water & cover , for the wontons to soak up the stock. Likewise , the wontons can be cooked by simply boiling in stock soup. enjoy!

Vegetable Spring Rolls (Thai)
1 c bean sprouts 1 c mushrooms, finely chopped ½ spring onions/Chinese chives, finely chopped ½ tsp salt 4 cloves garlic, crushed 1 tab fish sauce ½ tsp sugar 1 c soaked bean thread noodles (chopped) pepper 1 egg, beaten Spring roll skins Oil for deep frying
Heat 2 tab oil, fry garlic 2 min, add sprouts, mushrooms, spring onions and noodles.Stir-fry 2 min.Add fish sauce, sugar, salt & pepper.Cool.
Place tsps in skins, roll up and seal with egg.
Deepfry 5 – 8 min.Drain.
Serve with chilli sauce.

Wonton’s
350g Pork Mince ¾ tsp Salt 1 tsp Sugar 1 tsp Soya Sauce ¼ tsp Five Spice 2 tsp Cornflour 1 egg white – lightly beaten
Combine and leave ½ hour.
Put ¾ tsp into wrapper and fry until golden
½ tsp Salt ½ cup Sugar ½ cup Water 3 Tabs Tomato Sauce
Combine and thicken with 2 tsp of cornflour

Has anyone baked, or grilled in an electric grill, the spring rolls once they're wrapped, instead of deep frying? I think they'd be quite crunchy....

I have baked and they were nice. I think I may have brushed with a little olive or canola oil though.

Yes, you put into a pot and heat until thicken, the sauce is really nice, and a good red colour

This is a really nice and easy recipe. Make sure you only use 1/4 tsp of five spice, it is very strong

I use my snack toaster to cook mine, giving them a quarter turn while cooking, they are really crunchy and not greasy as with deep frying.
