anyone have any yummy pudding recipes? wanna make my mumma some yummy pudding to go with her roast on sunda night for mothers day. thanks :D (something not too hard LOL)

Chocolate Spongy Pud:
1 cup flour
1/4 tsp salt
3/4 cup white sugar
1 egg, slightly beaten
2 Tbsp butter
2 tsp baking powder
1 dsp cocoa
1/2 cup milk
1 tsp vanilla essence
Melt butter, add together with milk and egg, mix all dry ingredients in. Place in baking dish.

Sauce:
3/4 cup brown sugar
1/4 cup cocoa
1 3/4 cups boiling water
Mix brown sugar and cocoa. Sprinkle over sponge mixture and pour the boiling water over top.
Bake at 180 oC for 30-40 mins.

Sorbet

500 grams fruiteg. Strawberries, boysenberries, plums, mangoes, peaches(canned is fine).
1/2 cup sugar
1 cup water
1/4 cup lemon juice
2 egg whites

Puree fruit. Strain and discard any skins or seeds. Set aside.
In a saucepan combine sugar and water. Cook over a low heat, stirring constantly until sugar has
dissolved. Remove from heat and allow to cool slightly.

Combine sugar syrup ,fruit puree and lemon juice. Pour into a shallow container. Put in freezer until
Mixture starts to freeze on top, then transferthe mixture into a bowl. Add egg whites and beat until combined. Pour back into the shallow container and refreeze until set.

Serve inchilled glasses.

Chocolate boysenberry layer trifle.
This is an old tupperware recipe made in the tupperware jelly mould, but can be made in any mould or just in a lovely presentation trifle bowl.
Ingredients:
purchased or homemade choc sponge
1 can boysenberies or frozen beries.
whipped cream
Layer chocolate sponge, drizzle over a little boysenberry juice, and thin layer of fruit then whipped cream. Repeat layers. If making in a mould make the final layer a one piece slice of sponge, so that you have a base so that you caninvert the mould, if making in a presentation bowl finish with whipped cream and garnish with chocolate curls or berries.

Mmmm...the above recipe is similiar to my choc trifle I make at Xmas.I also use choc mousse.

Peach or Apricot Danish Pudding

2 x 425 gram tin of peaches or apricots
75 grams of butter, melted
1 large egg
½ C milk
¼ C juice from the can
¼ tsp almond essence
½ C sugar
1 ½ C self raising flour
½ C icing sugar
¼ C toasted flaked almonds

Drain fruit from the cans into a sieve and keep liquid.
Warm butter until melted.
Add egg, milk and ¼ C apricot juice and almond essence.
Beat with a fork until just combined.
Chop peaches roughly and keep some whole to put on top.
Add ½ or a bit more to the liquid and ½ for the topping.
Add with sugar and flour, fold until dampened.Don’t over mix.

Spray tin or baking dish (oval dish works well).

Spread mixture over bottom with whole peaches on top with flaked almonds.
Bake at 190 degrees for 15-30 minuntil mixture springs back.

Combine icing sugar with some juice and drizzle over.

Serve with fresh whipped cream.

Avocado Chocolate Mousse

1/2 cup sugar or honey
1/2 cup warm water
2 medium sized avocados
1 tsp pure vanilla essence
1/2 cup good quality cocoa powder
1 Tablespoon of lemon juice.
Put all ingredients in a food processor & process to combine
refrigerate until required.

This is utterly delicious made with plain sponge, (not choc) cream of course and tinned plums in a tupperware jelly mould and put in the fridge for several hours or overnight.
The plums make it particularly tasty and it looks quite impressive when turned out!
