buy a tin of smoked mussels or oysters or even a tin of clams and make a white sauce for them - that is SO delicious and a little bit out of the ordinary.Or else there's always smoked fish, creamed corn with cheese.
For the blini toppings try some cream cheese with salmon (not original but it's great); on the salmon thing you could also try it with 70% mayonaise 30% horseradish sauce; sundried tomato and olives; feta anchovies and drizzle with olive oil

or asparagus in a white/cheesy sauce. yummy. tinned asparagus is best for this.

For blini I buy seafood dip and spread that over them, then a piece of salmon, very nice.
